Kapsalon, the „Dutch Döner kebab”, has become one of the most popular street foods in the Netherlands and has an interesting mix of influences: Dutch and Middle Eastern. A great combination of fries with spicy, cheesy meat and fresh vegetables. It has also been called a “calorie bomb” and a “culinary lethal weapon”, with a high fat content and up to 1,800 kilocalories in a large portion.

The history of the Kapsalon

The name kapsalon comes from the Dutch word for barbershop – it was created in Rotterdam in 2003. The owner of a hairdressing salon was having lunch at a nearby shoarma store. He asked to add various toppings such as Gouda cheese, tomatoes, lettuce, garlic sauce and the spicy Indonesian sauce sambal. Kapsalon soon became popular with both locals and tourists, and it wasn’t long before it became a big fast food hit. In the Netherlands, Kapsalon is mainly eaten as a quick and filling lunch or as a hangover cure after a night of drinking.

But what is a Döner?

A street version of “Bursa kebabı” or Iskender kebab, associated with the first capital of the Ottoman Empire, Döner kebab refers to grilled meat cut from a vertically rotating spit, similar to Greek Gyros or Arabic Shawarma. During roasting, the meat is continuously cut from the giant spit so that by the time it reaches the centre, it is cooked through and every part of the meat on the spit is edible. Originally, the kebab prepared in this way was served on a plate, but in the street version it is placed in a pita made of dough together with the dressing and salad.

Döner has become fast food

 In Europe and around the world, the kebab that characterizes Turkish gastronomy is now more commonly known as the doner kebab. The kebab originates from a Turkish immigrant from Germany, Mahmut Aygündöner, who first offered his kebab in a pita with various yogurt dressings and salad in his Berlin restaurant “City Imbiss”. According to another source, an Anatolian immigrant named Kadir Nurman put it on the menu for the first time in 1972 in West Berlin near Zoo station. He realized that despite his excellent restaurant, people didn’t have time to go inside and wait for the traditional kebab to be prepared. He then developed the kebab into a fast food that can be sold in a modernized form.

How is Kapsalon different from Döner?

In a Döner, the ingredients are served on a plate or in a pita: spicy meat, fresh vegetables and a tangy yogurt sauce. The Kapsalon is complemented by crispy French fries on which the spicy roasted Döner meat and cheese, are quickly baked in the oven (usually on an aluminum tray). The vegetables and side dishes are then placed on top or served on a separate plate next to the potato-cheese-spiced meat delicacy.

재료:

Marinated chicken (Shoarma):
  • 1 kg chicken breast or/and thighs
  • 소금 2작은술
  • ½ tsp turmeric
  • 1 tsp coriander
  • 1 tsp ground cardamon
  • ½ tsp cumin
  • ¼ tsp ground cinnamon
  • 1 tsp sweet or smoked paprika powder
  • ¼ tsp cayenne pepper
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 6 cloves of garlic, grated
Garlic sauce:
  • 5 tbsp greek or full-fat yogurt
  • 5 tbsp mayonnaise
  • 소금 & 후추
  • 1 tbsp dried dill or/and chives
  • 4 cloves of garlic, grated
Plus
  • 1 kg french fries
  • 120 g Gouda cheese
  • lettuce, red onion, tomato, cucumber

단계:

  1. Cut the meat into strips. Mix with all the marinade ingredients. Cover and leave to marinate for at least 1 hour, preferably overnight.
  2. Fry the pieces of meat in 2-3 tablespoons of hot oil until they are cooked: tender and light brown.
  3. Deep-fry the crisps until crispy.
  4. Layer the ingredients in deep aluminium trays: fries, shoarma meat and the grated Gouda cheese. Bake in the oven at 200°C (390°F) for 5 minutes.
  5. Add shredded lettuce, cucumbers, sliced red onions and tomatoes. They can also be served alongside baked cheesy potato meat.
  6. Mix the ingredients for the garlic sauce well and drizzle over the vegetables. Enjoy your Kapsalon!
