The perfect chicken dumpling soup

Συστατικά:
- 1 whole chicken breast with bones
- 1 whole chicken backbone
- 3 carrots
- 1 ρίζα μαϊντανού
- 1/2 ρίζα σέλινου
- 1/2 yellow wax pepper
- 1 ντομάτα
- 1 head of onion
- 2 σκελίδες σκόρδο
- 1 head of kohlrabi
- 20 black pepper seeds

- soup pasta
For dumplings:
- 1 αυγό
- 2 tbsp breadcrumbs
- 1/2 tsp nutmeg
- salt&pepper
Βήματα:
- Separate all the meat from the chicken breast and place meat in the fridge.
- Boil the breast bone and backbone in 12 cups of water. Remove the “egg white foam” from the surface of the water and reduce the heat to low.
- Add the vegetables, salt and peppercorns. Cook over a low heat for 2.5-3 hours.
- Drain the broth and return to the heat. Set aside carrots.
- Thoroughly blend the diced chicken breast with an egg, breadcrumbs and spices. Form small balls from the mixture and place them in the boiling stock. Cook until they rise to the top of the soup.
- Serve the dumplings with the broth, the sliced carrots and the cooked soup noodles. Enjoy your chicken dumpling soup!
