Leave to activate for 10 minutes.<\/li><li>Combine the two types of sifted flour with a pinch of salt and 2 tablespoons of sugar. Add an egg, the melted butter and the activated yeast mixture. Knead until you have a smooth and elastic dough. Cover and leave to rise for an hour.<\/li><li>In the meantime, prepare the filling. Mix the cottage cheese (or substitute) with a fork. Add an egg, the raisins, semolina, sugar, vanilla sugar, sour cream, and lemon peel to taste. Mix thoroughly.<\/li><li>Roll out the risen dough 1\/4&#8243; (5 mm) thin on a floured work surface. Cut the dough into 4&#215;4&#8243; (10&#215;10 cm) squares. Place 1 1\/2 tablespoons of filling in the center of each piece of dough. Fold up and pinch the opposite corners and twist the peak a little.<\/li><li>Brush the sweet cheese bundles with the egg yolk and milk mixture and bake in a preheated oven at 350\u00b0F (180\u00b0C) for 20-22 minutes.<\/li><li>Let cool a little and serve with powdered sugar.
