Ingredients:

  • 500 g bread flour
  • 280 g water
  • 7 g dried yeast
  • 1 teaspoon granulated sugar
  • 2 teaspoons salt
  • 3 Tablespoons olive oil

Steps:

  1. Put the sifted flour in a bowl and make a well in it. Pour in the lukewarm water, sugar and yeast. Mix gently only in the middle of the flour. Leave to stand for 10 minutes.
  2. Add the olive oil and salt. Mix the dough a little with a spatula and then start kneading it by hand. Knead until you have a firm, springy and shiny dough. Brush the bowl under the dough with a little olive oil. Press the dough lightly, cover and leave to rise for 1 hour.
  3. Loosen the dough and place it on a desk. Knead it a little and shape it into a ball. Open it with your hand – press it only with your fingertip – to form a 10″ (25 cm) circle.
  4. Fold up little the dough on two opposite sides and press the folds down. Start on the third side of the dough and roll it up. Press down after each roll to bind the dough. When you have completely rolled up the dough, pinch the last seam together.
  5. Place the dough on a baking sheet lined with parchment paper, cover with a towel and let rise for another 1 hour.
  6. Cut the dough 3-4 times with a sharp knife or a razor. Sprinkle with some water and bake in a preheated oven at 200°C (400°F) for 30 minutes.
  7. Let the bread cool on a rack, cut and enjoy!
