Il cavolo ripieno \u00e8 diventato popolare nei Balcani e in Ungheria solo nel XVIII secolo, grazie all'influenza turca. La sua prima descrizione ungherese \u00e8 apparsa nel libro di cucina T\u00f3tfalus nel 1695. Dall'epoca dei Turchi ungheresi fino al 1750 circa, il cavolo ripieno originale, autentico e archiviato di Szabolcsi era fatto di montone. Ha una storia importante nella storia ungherese. La carne di montone fu costantemente sostituita dalla carne di maiale mangalica, ancora oggi ampiamente consumata. Circa un terzo della carne \u00e8 costituito da prosciutto di Mangalica affumicato e pancetta. La carne, la pancetta e il prosciutto devono essere tagliati in piccoli pezzi con un coltello. I tritacarne non esistevano molto tempo fa e il prosciutto e la pancetta tritati hanno un sapore completamente diverso!
