The Hungarian - Austrian pasta cake

Sweet, cheesy, and adorable. Styria is the original home of this sweet cheese pasta cake (in Hungarian: “Stíriai metélt”). It was quite popular in Hungary during our grandparents’ time, but now we occasionally bake it for the enjoyment of family or guests. It’s a little tricky, but it’s well worth the effort… Farmer cheese (or curd cheese) is a fantastic invention that is a huge hit in Hungary. We like it sweet or salty, raw or fried, chunky or creamy, and at any time of day. Bake this yummy treat with us!

Ingredients of sweet pasta cake:

For the pasta:

  • 500 g Farmer cheese or Ricotta
  • 250 g all-purpose flour
  • 2 tbsp sour cream
  • 2 egg yolks

For the sauce:

    • 3 eggs
    • 200 g butter
    • 100 g powdered sugar
    • 50 g raisins
    • 1 cup sour cream
    • 2 tbsp vanilla sugar or 1 tbsp extract
    • 1 lemon

Steps:

  1. Crumble the Farmer cheese thoroughly. Add 2 egg yolks, 2 tablespoons of sour cream and the flour. Knead everything into a homogeneous dough. Cover and leave to rest for 30 minutes. Roll out the dough on a floured work surface to the thickness of a finger. Cut into 10 x 1″ cm (4″ x 1/2″) sticks. Boil them in salted water for about 5 minutes. Drain, mix with a little melted butter and set aside.
  2. Mix 3 egg yolks with powdered sugar and the softened butter with a whisk until creamy. Add a cup of sour cream, raisins, vanilla sugar and the grated zest of a lemon. Mix well.
  3. Beat the 3 egg whites with a pinch of salt to a firm foam.
  4. Carefully combine the cooked pasta with the egg yolk mixture and the beaten egg whites.
  5. Pour the batter into a greased baking dish (size approx.: 12 “x 8″/ 30×20 cm) and bake at 180°C (350°F) for 50 minutes.
  6. Leave to cool slightly, slice and serve sprinkled with powdered sugar. Enjoy your dessert!
