The perfect sweet cheese bundles

We continue our series on the most popular Hungarian baked goods. The next figure is another big favorite, namely the sweet cheese bundles, a traditional pastry filled with raisins and vanilla cottage cheese (or ricotta). If you are in Hungary, you should definitely try them in a bakery! Or make them at home following our recipe and video. Believe me, everyone will love it!

Ingredients:

Dough:
  • 250 g all-purpose flour
  • 250 g bread flour (or all-purpose again)
  • 1 egg
  • 2 tbsp + 1 tsp granulated sugar
  • a pinch of salt
  • 25 g fresh or 7 g dried yeast
  • 150 ml milk
  • 80 g melted butter
  • 1 egg yolk + 50 ml milk for brushing
Filling:
  • 500 g Farmer cheese or Cottage cheese or Ricotta
  • 1 egg
  • 4 tbsp sugar
  • 1 tbsp vanilla sugar or extract
  • 2 tbsp sour cream
  • 2 tbsp semolina
  • to taste lemon peel
  • 50 g raisins

Steps:

  1. Mix the lukewarm milk with 1 teaspoon of sugar and the yeast. Leave to activate for 10 minutes.
  2. Combine the two types of sifted flour with a pinch of salt and 2 tablespoons of sugar. Add an egg, the melted butter and the activated yeast mixture. Knead until you have a smooth and elastic dough. Cover and leave to rise for an hour.
  3. In the meantime, prepare the filling. Mix the cottage cheese (or substitute) with a fork. Add an egg, the raisins, semolina, sugar, vanilla sugar, sour cream, and lemon peel to taste. Mix thoroughly.
  4. Roll out the risen dough 1/4″ (5 mm) thin on a floured work surface. Cut the dough into 4×4″ (10×10 cm) squares. Place 1 1/2 tablespoons of filling in the center of each piece of dough. Fold up and pinch the opposite corners and twist the peak a little.
  5. Brush the sweet cheese bundles with the egg yolk and milk mixture and bake in a preheated oven at 350°F (180°C) for 20-22 minutes.
  6. Let cool a little and serve with powdered sugar. Enjoy your sweet cheese bundles!
