Ingredients:
200 ml water
250 g of rice
1 litre of milk
2 packets (14 g) of vanilla sugar
20 g of raisins
1 lemon
50 g of butter
6 eggs
8 tablespoons of sugar
2 tablespoons of plain flour
salt
Steps:
Cook the rice in the water, stirring until the water evaporates.
Add the milk and cook over low heat until the rice is completely tender (about 30 minutes).
Mix the rice with the vanilla sugar, raisins, grated lemon zest and butter. Stir until the butter melts. Cover and let stand for 30 minutes.
Separate the eggs. Beat egg whites with a pinch of salt until firm.
Thoroughly beat the egg yolks with the sugar.
Add the white foam and yolk mixture to the rice and mix gently. Sprinkle with the flour and continue stirring until a homogeneous mass is obtained.
Pour this mixture into a buttered and crumbled (or parchment paper lined) baking dish and bake at 350°F (180°C) for about 35 minutes.
Let cool, cut and serve with powdered sugar and our favorite jam. Bon appetit!
