Recipe of the ragout soup with chicken liver and tarragon

Ingredients:

  • 2 tbsp lard or cooking oil
  • 2 onions
  • 500 g chicken breast
  • 300 g chicken liver
  • 150 g carrots
  • 150 g parsley roots
  • 150 g celery roots
  • 250 g champignon
  • 200 g peas
  • 200 ml sour cream
  • 200 ml cooking cream
  • salt & pepper, dried tarragon, lemon juice

Steps:

  1. Heat the lard or oil and fry the finely chopped onions for 4-5 minutes.
  2. Add the diced chicken breast and fry for a further 5 minutes.
  3. Add the diced carrots, parsley root and celery root. Cook for a further 5 minutes, stirring constantly.
  4. Add the sliced mushrooms and then the peas. Season with salt and pepper and pour in 14 cups (~3 1/2 litres) of water or broth. Cook until all ingredients are tender.
  5. Add the diced chicken livers and cook for 5 minutes. Mix the sour cream with the cooking cream and slowly mix in the soup. Season with tarragon and cook for a few minutes.
  6. Remove the soup from the heat and sprinkle with lemon juice to taste. Serve and enjoy your meal!
