The story of the pork loin a'la good wife
In Hungary, when preparing food, there are names that refer to a person practicing a profession or, for example, his wife, which are actually fantasy names. For example, “The good wife’s way” means: if it’s a meat dish, it’s accompanied by a ragout of bacon, onions, mushrooms and green peas, if it’s fish, it’s accompanied by a creamy mushroom sauce.
Cut the pork loin into 1 cm thick slices. Season with salt and pepper and flatten it out a little.
Heat the butter with oil. Dip the slices of meat in the flour on both sides and then fry on both sides until golden brown. Remove, set aside and keep warm.
Fry the sliced bacon in the remaining fat until crispy. Add the finely chopped onions and fry for 5 minutes.
Add the sliced mushrooms, chopped parsley, salt and pepper. Cook for 10 minutes.
Add the pre-cooked green peas and cook for a further 2-3 minutes.
Serve the fried meat slices with the vegetable ragout on top. Serve with fried potato cubes as a side dish. Enjoy your lunch!
