Hungarian paprika potatoes or potato sausage stew is one of the most popular Hungarian dishes in the country, cheap, fast and delicious. It is often found in rural areas and family kitchens, but rarely in restaurants. It can be a nice vegetarian dish, but I almost always add some sausage. It can be made with any sausage. The story of the Hungarian paprika potatoes

We tend to believe that this dish is authentically Hungarian, as we do with many other foods. It is not quite that easy, though, as the history of paprika potatoes shows that they are not just a part of daily Hungarian cuisine. Austrians, Germans, and other nationalities, and many consider it a source of national pride. It is also a staple of daily cuisine in Austria under the name “Erdäpfelgulasch”. Additionally, it is well-known in American and Anglo-Saxon cuisine as potato goulash.

We can already view this dish as being Hungarian from a different angle if we take into account the fact that the two main ingredients, namely potatoes and paprika, only made an appearance in Hungarian cuisine about 200 years ago. A long time must have passed before we could recognize the paprika potato as Hungarian national dish, especially when we consider that the potato’s initial appearance was not a complete success; rather, it was only used when there was nothing else.

Paprika potatoes are one of the most popular dishes in Hungarian cuisine today, and their simplicity only adds to their majesty. This is another dish that can be made daily and even quickly, along with goulash soup, stuffed cabbage, stew, fish soup, and bean stew. Ingredients:

  • 1 tbsp of duck fat or lard
  • 100 g of diced bacon
  • 2 medium onion – chopped
  • 150 g sausage or chorizo
  • 8 medium diced potatoes (~700g)
  • 1 cup of chopped tomatoes
  • 1 cup of chopped yellow pepper
  • 1/2 tsp of ground black pepper
  • 2 tbsp of paprika powder
  • salt

Steps:

  1. Heat the lard and fry the bacon until it is melted and crispy.
  2. Add the onion and fry for 4-5 minutes. Add the sausages and fry over high heat for 3-4 minutes.
  3. Remove pan from heat and stir in paprika powder. Immediately pour in 1/2 cup of water. Return to the stove!
  4. Add tomatoes, yellow pepper and potatoes. Add salt and pepper. Cover with water and cook until potatoes are tender.
