Hungarian Doughnuts recipe

Sweet bakeries known as doughnuts are usually baked with leavened dough and eaten with jam and powdered sugar on top. There are several hypotheses regarding the origin of this delicacy, which became famous in Hungary in the 19th century. Some claim that it comes from Vienna, while others attribute its dissemination to the French queen Marie Antoinette. In Hungary, eating donuts is connected to the carnival: donuts from the carnival are a common snack before fasting, and in the Christian tradition, it’s good consuming as many donuts as you can before abstaining from decadent pleasures. Folklore holds that donuts are a sign of finding a mate: females would give a donut as a present to guys to show them that they were sympathizing.
Ingredients of hungarian doughnuts recipe:
- 500 g (1,1 lbs) bread flour
- 50 g (1,8 oz) butter
- 1+2 tbsp powdered sugar
- 30 g (1 oz) fresh yeast
- 300 ml (10 fl oz) milk
- 2 egg yolks
- 1 tbsp rum
- apricot jam+powdered sugar for serving
- salt
- 4 cups cooking oil
Steps of doughnuts recipe:
- Mix the lukewarm milk with 1 tbsp sugar and yeast. leave to rise for 10 minutes.
- Place the sifted flour with a pinch of salt in a large bowl. Add the egg yolk, 2 tablespoons of sugar, the rum and the risen yeast mixture. Knead the ingredients – adding the melted butter in several batches – until a soft, smooth and elastic dough is formed. Sprinkle with a little flour, cover and leave to rise for 1 hour.
- Place the dough on a floured work surface and roll out to a thickness of 1.5 cm. Cut out 6-7 cm circles from the dough. Use a pastry cutter or a larger glass for this. Cover the doughnuts and leave to rise for 30 minutes.
- Heat the oil in a cast-iron pan to a medium hot temperature (170°C/340°F).
- Make a dent in the center of each doughnut and place them in the hot oil with the pressed-in side facing down. Cover the pan with a lid and fry the doughnuts for 90 seconds. Turn them over and fry for a further 90 seconds without the lid. Drain on a rack with the dented side down and leave to cool.
- Serve with apricot jam and powdered sugar. Enjoy your Hungarian doughnuts!
