Hungarian cabbage noodles are a very simple dish. We just caramelize the delicious sweet cabbage, and mix with the boiled noodles. Ground black pepper is an important ingredient: its flavor rounds off the dish. If you really want to make authentic homemade cabbage pasta, knead your own dough, roll it out and cut it into squares. With fresh pasta, you can conjure up an even more delicious dish for the family table.
Ingredients:
1 head of (~1 kg) white cabbage
500 g square shaped pasta
2 tbsp of sugar
1 tbsp of butter or lard
salt & pepper
Steps:
Cut the cabbage in half and grate it (or use a food processor).
Then mix with 1 tablespoon of salt and leave to stand for 35-40 minutes. Squeeze the water out of the cabbage well with your hands.
Heat the butter in a saucepan, add the sugar. Caramelize over a low heat until light brown.
Add the chopped cabbage, stir, cover and cook over a low heat for 35-40 minutes. Stir occasionally. During this time, the cabbage will turn a lovely dark brown. Season with ground black pepper.
Add the al dente cooked, drained pasta and cook over a low heat for 5 minutes, stirring constantly. Finally, season with salt and enjoy!
