The name lavender is of Roman origin and can most likely be traced back to two words: “alavare” – the word for washing – and “aelent”. The Romans recognized the value of lavender as a healing plant that prevents the spread of infections, but it was also used as an insect repellant and for washing. Dioscorides, a Greek military physician, discovered the healing properties of lavender while collecting herbs in the Mediterranean region in c. in e 77.

Ingredients of honey lavender ice cream:

  • 1 cup fresh or dried lavender flower
  • 1 lemon
  • 500 ml water
  • 600 ml whipping cream
  • 1 tbsp cornstach
  • 2 tbsp vanilla sugar or 1 tbsb extract
  • 4 tbsp honey
  • 2 tbsp powdered sugar

Steps:

  1. Mix the lavender flowers with the sliced lemon and water. Cover and leave to stand in a cool place for 4 days. Stir every day.
  2. After 4 days, strain and squeeze out the lavender juice. Add the cornflour and mix well with a whisk. Add the vanilla and honey. Cook over a low heat until the mixture thickens. Leave to cool.
  3. Whip the whipping cream with the powdered sugar until just stiff peaks form. Add the lavender syrup and stir gently. Pour into a bowl and place in the freezer for at least 6 hours. Stir every 30 minutes in the meantime. Or… use an ice cream maker. And enjoy your lavender ice cream!
