The legendary Fanta cake

The idea of a soft drink being an ingredient in a cake recipe seems a little odd at first. However, there’s no need to be scared of it because this drink pairs amazingly well with this dish, creating an incredible fruity jelly on top. Feel free to make it; it’s not too complicated to bake. This cake will be adored by the entire family or group of friends.

Ingredients of Fanta cake:

For sponge cake:

  • 6 eggs
  • 2 tbsp of dark cocoa powder
  • 4 tbsp of all-purpose flour
  • 15 g baking powder
  • 1/2 cup cooking oil
  • 6 tbsp white granulated sugar
  • salt

For cream cheese:

  • 200 g unsalted butter
  • 500 g farmer cheese or ricotta
  • 100 g powdered sugar
  • 15 g vanilla sugar
  • 1 lemon

For Fanta jelly:

  • 3 cups of Fanta
  • 4 tbsp of sugar
  • 80 g vanilla custard powder

Steps:

  1. Beat the eggs with the granulated sugar until frothy. Add the cooking oil and stir in.
  2. Mix together the flour, cocoa powder, baking powder and a pinch of salt. Add to the egg mixture and mix carefully to form a homogeneous mass. Pour into a baking tray lined with baking paper (tray size approx. 25×35 cm, 10×15″). Spread and bake in a preheated oven at 180°C (360°F) for 25 minutes. Leave to cool, remove the baking paper and set aside.
  3. Mix the farmers cheese with the butter, powdered sugar, vanilla sugar, zest and juice of one lemon until creamy. Spread on the sponge base.
  4. Mix the sugar, custard powder and Fanta with a whisk and bring to the boil over a low heat. Cook and stir until the mixture thickens. Leave to cool to lukewarm. Pour over the cream cheese, spread evenly and refrigerate for at least 3 hours.
  5. Slice, then savor your Fanta cake!
