Add the egg yolk, 2 tablespoons of sugar, the rum and the risen yeast mixture. Knead the ingredients &#8211; adding the melted butter in several batches &#8211; until a soft, smooth and elastic dough is formed. Sprinkle with a little flour, cover and leave to rise for 1 hour.<\/li><li>Place the dough on a floured work surface and roll out to a thickness of 1.5 cm. Cut out 6-7 cm circles from the dough. Use a pastry cutter or a larger glass for this. Cover the doughnuts and leave to rise for 30 minutes.<\/li><li>Heat the oil in a cast-iron pan to a medium hot temperature (170\u00b0C\/340\u00b0F).<\/li><li>Make a dent in the center of each doughnut and place them in the hot oil with the pressed-in side facing down. Cover the pan with a lid and fry the doughnuts for 90 seconds. Turn them over and fry for a further 90 seconds without the lid. Drain on a rack with the dented side down and leave to cool.<\/li><li>Serve with apricot jam and powdered sugar.
