Egg stuffed meatloaf - "Stefánia szelet"
Today we cooked egg stuffed meatloaf “Stefania” (in Hungarian: Stefánia vagdalt or Stefánia szelet recept). We use our normal meatloaf recipe, with the only difference that we fill the meat with hard-boiled eggs.
What is (who is) "Stefánia"?
Born in 1864, Royal Princess Stefania (Stefanie van België) of Belgium was the child of the youngest daughter (later Queen of Belgium) of Count Palatine Joseph. She was married at a young age to Franz Joseph I.’s son, Rudolf. After Rudolf’s suicide, the widowed heiress to the throne fled the Viennese court, began travelling, and then entered into a low-class marriage with the landowner Elemér Lónyay, with whom she lived happily lived at his castle in Oroszvár. The couple fled to Pannonhalma in Hungary before the Second World War. Stefania died here in 1945 and was buried in the crypt of the main abbey church.

But how does the princess relate to the recipe?
While living in Hungary, Stefánia liked the country and the cuisine, and even enriched Hungarian gastronomy. The main dishes he creates, e.g. meatloaf, roast meat and risotto prepared in the Stefania style have a common feature that they contain boiled eggs incorporated in some form. Cakes, such as the Stefania cake, are also said to be associated with her name. Don’t worry, there’s no boiled egg in the center! This is a delectable chocolate cream confection.

The recipe for stuffed meatloaf with eggs is just one of many. Feel free to experiment by adding slices of ham, cheese, and bell pepper. Maybe use some bacon and grated cheese on the outside of our meatloaf. If we fill it with eggs the traditional way and strive for perfection, then cut 1-1 centimeter off the ends of the boiled eggs. The joints will be perfect, and each cut piece of meatloaf will look spectacular. And the flavor is…sensational!
With what kinds of meat can stuffed meatloaf be prepared?
The recipe calls for minced pork, but it can also be made with beef or chicken if the appropriate amount of extra fat is added to the meatloaf mixture. This can be chopped or minced bacon, or kidney fat in the case of beef. It is difficult to acquire; however, if we have a great butcher, he will take care of the order! By the way, kidney fat is also found in at least one other food: premium quality burger meat patties. Adding 20% to the meat works wonders for the burger.
Ingredients:
- 800 g minced pork shoulder
- 8 cloves of garlic
- 1 larger onion
- 3 bread rolls
- 6+1+1= 8 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika powder
- 1 tbsp lard
Steps:
- Prepare six hard-boiled eggs, let them cool a bit, and peel them. Cut off the ends of eggs.
- Soak bread rolls in cold water for 15 minutes.
- Heat the lard and sauté the finely chopped onion for 5 minutes. Add the crushed garlic and simmer for 1 minute more. Remove from heat.
- Mix well the minced meat with sautéed onion-garlic mixture, seasons, the squeezed bread rolls, and an egg.
- Place the meatloaf on a baking sheet. Frorm half of the meat into a rectangle about 20×15 cm. Place the boiled eggs lengthwise side by side in the centre. Cover with the other half of the meatloaf and shape into a half cylinder.
- Brush with beaten egg yolk and bake at 160°C (320°F) for 1 hour.
- Serve with parsley potatoes. Enjoy your meal!
