This cold mushroom salad – In Hungarian: “Svédgomba saláta” (Swedish mushroom salad) is a simple appetizer prepared with tomatoes and spices. The tasty dish can be served hot or cold: It’s a good choice as a snack without a side dish, but you can also put it on pasta or rice, or try it with toast.

Swedish mushroom salad that was never actually Swedish

The Internet has made it much easier to discover the origins of a dish, but we failed with the Swedish mushroom salad. While the sweet and sour flavor of this retro dish was clearly the star of the buffet tables in Hungary, we would rather call it an Asian twist than a Nordic favorite.

Cold mushroom salad versions

The possibilities are nearly limitless. We’ve already discovered a recipe that includes marinated mushrooms in the salad or alternatively, steamed mushroom slices with mayonnaise. You can prepare a dish with many different types of mushrooms; however, it is sometimes to try even stronger-flavored mushrooms when cooking; the end result can be completely different when using boletus, for example.


  • 500 g of champignon
  • 1 large onion
  • a clove of garlic
  • olive oil
  • 100 ml of dry white wine
  • salt&pepper
  • 1 tsp ground rosemary
  • 2 tbsp tomato paste
  • 3 bay leaves
  • 1 tbsp of sugar


  1. Cut mushrooms into thin slices. Finely chop the onion and garlic.
  2. Sauté onion and garlic in a little oil for 3-4 minutes.
  3. Add the mushrooms and simmer for 5 minutes.
  4. Pour on the wine and let the alcohol evaporate.
  5. Season with salt,pepper, add rosemary.
  6. Add tomato paste, sugar, juice of the lemon, and bay leaves. 
  7. Cook for about 20 minutes.
  8. Serve with a few drops of olive oil.
