This delicious cream of cauliflower soup is guaranteed to make your day! It’s easy to prepare, creamy, spicy and contains the sensational taste of cauliflower. Prepare it with us, just follow the recipe instructions.


  • 100 g of butter
  • 1/2 leek
  • a big head of cauliflower
  • 3 bay leaves
  • 1 tsp of dry thyme
  • 1 tbsp Dijon mustard
  • 8 cups of chicken broth
  • 2 cups of sour cream or cooking cream
  • Brie or Camembert cheese
  • salt, ground nutmeg, ground black pepper


  1. Melt the butter and sauté the chopped leeks for 3-4 minutes.
  2. Add the cut flowers of the cauliflower, the bay leaves, the thyme, the mustard and the chicken broth.
  3. Cook until the cauliflower is very tender. Remove the bay leaves.
  4. Blend soup thoroughly.
  5. Add sour cream, and seasonings to taste and cook for a few minutes.
  6. Serve with chopped leek and cheese slices.
