In Hungary, this pottage is the star of households and school lunches. It is easy to prepare and very tasty! Cabbage with tomatoes tastes best when it is sweet, but in such a way that the sugar does not predominate. We offer a side dish of spicy, salty roast pork ribs so that the balance between flavors is perfect. The meat will be juicy and soft, the cabbage dense and sweet, when they are paired, you can not go wrong with them.
Ingredients of cabbage in tomato sauce:
1 medium onion
1 head of cabbage (~1 kg)
2 tablespoons of cooking oil
4 cups of tomato juice
2 tablespoons of sugar
1/2 teaspoon of ground black pepper
1 teaspoon of ground caraway
salt to taste
For the roux:
3 tablespoons of cooking oil
3 tablespoons of plain flour
Steps:
Cut the cabbage into quarters. Remove the stalks. Cut cabbage quarters into thin strips.
Heat the cooking oil and sauté the sliced onion over medium heat for 8-10 minutes.
Add the sliced cabbage and simmer for 4-5 minutes. Mix with tomato juice, sugar and spices.
Add one cup of water, cover and cook until cabbage is tender.
In the meantime, prepare the roux: Heat oil, add flour and fry over low heat, stirring, until light brown. Let cool.
When cabbage is tender, pour 2 ladles of pottage’s hot tomato juice into roux, mix well and return to cabbage. Mix well and cook for 4-5 minutes.
